Can anyone make me run through the process of making sun-dried cherry tomatoes, and how to conserve oil?

The first is to choose the right tomatoes, you want small for drying tomatoes fleshy. The traditional variety is drying Principe Borghese but you can also use plum or Roma tomatoes, which are much more accessible to those who can not grow their own tomatoes or start your own plants from seed.
