Eating Out in Naples
You may not have the lively squares of Florence, the imposing monuments of Rome or the flow channels of Venice, Naples is where you learn all about the "heart of Italy. The town can be noisy, polluted, overcrowded, and a little intimidating, but equally interesting and attractive, and has an incredible selection of tasty dishes.
Neapolitan cuisine owes much to the fertile land that offers some cultures unique, especially the San Marzano tomatoes, and the sea that is the basis of all dishes seafood mussels, clams and other shellfish all play an important role in the kitchen City. From the simple "di cozze impepata" (mussels, pepper, parsley, lemon juice and bread) for more elaborate recipes, rules Mold. The remaining seafood is just as well. Mista frittura A classic "may include ring sliced squids, small whole fish, small shrimps and prawns tall.
One of the best places to enjoy a traditional Neapolitan food Castel dell'Ovo delay in little known as the "Borgo Marinari" where many trattorias offers a pretty good selection of dishes based on rates, typical of southern Italy. It is also a relatively cheap Dining, especially compared with nearby Santa Lucia or Mergellina. If you're on a tight budget, the "Centro Storico" a lot of places that serve traditional dishes at reasonable prices. Needless to say that is where you will have the opportunity to eat with the locals.
Naples is the city proud birthplace of pizza: halfway between refined cuisine and traditional folk-class meal, Neapolitan pizza became one of the main dishes and a symbol Neapolitan cooking in the 18th century. Finally, it was consecrated in 1889 when the famous pizza maker Raffaele Esposito offered it to Queen Margherita di Savoia. The queen loved recipe, topped with mozzarella cheese, tomato and basil, was later named "Margherita Pizza" in his honor.
If you interested in history, as well as food and want to visit the place where pizza was invented as a chance for He is always there and is now known as Pizzeria Brandi. At this point, you might consider putting a little tourist trap, but should be worth a look just to say you've eaten at the pizzeria pizza was invented. There are other known and notable pizzerias as well as Da Michele, Di Matteo, Trianon da Ciro, and Cafasso, but really, really hard to eat a bad pizza in Naples. It could even have a pizza in one of the stalls beside the street Dining folded and think it is tastier than the pizza made by your local.
Unlike pizza, pasta was not invented in Naples, but in the industrial production of pasta Gragnano almost started with the techniques of drying and preservation. Made from durum wheat, harder to manipulate than soft wheat, industrial made pasta was more successful here than in northern Italy, home pasta was (and remains) more popular. Gragnano dough is still recognized for the quality of wheat and slow drying process. The variety most popular addition to the classic spaghetti and linguine are "Paccheri '(large hollow tube-shaped pasta) and long pipe ziti' as pasta, broken hands before cooking and usually covered with a canvas? r />
In Naples, you can eat pasta with almost everything: vegetables, meat, fish, butter or olive oil, even to yourself. Even with so many recipes to choose from, Neapolitans have their "holy trinity" of pasta sauces, 'Pummarola' Genovese ª cloth? . Pummarola a tomato sauce base, without flavor, except basil, knows that the only way if it is made with tomatoes San Marzano "adequate". Rag? makes a stew with tomato meat is consumed on the side. Genovese is similar to that rag? T instead of tomato, there are plenty of onions cooked with meat.
Genovese and fabric? and two dishes that require time, three hours is the absolute minimum, to be cooked. Accordingly, are home to classic dishes not very popular with restaurants. If you want to enjoy a good or a rag Genovese? Our best bet is invited to a house in Naples restaurants either do not serve, or simply play a poor version.
A typical Neapolitan menu May start with "Mozzarella in Carrozza (literally 'mozzarella in a carriage, transportation are two slices of bread dipped in a batter of egg salad) or a 'caprese (tomatoes, mozzarella and basil) and then continue with a pasta dish, like "Spaghetti alle vongole Veraci' (spaghetti with clams), or "fabric for macaroni? main dish, you can make all 'impepata di cozze or mullet in the oven. So, to refresh the mouth after fish dishes, there is nothing better than a good cheese as "scamorza 'Or' Caciocavallo.
Finally, you can not miss a tasting of typical Neapolitan pastries such as "Bab? (In light of flour, eggs and yeast and bathed in rum or limoncello) "Sfogliatella '(a cake shaped hull made of several layers of thin dough filled with orange-flavored ricotta),' Struffoli '(grape sized, deep-fried dough balls dipped in honey) and pasta last but not least, Napoletana "(an orange blossom wheat and ricotta pie Scented traditionally at Easter). Needless to say, these delicacies are always accompanied by a cup of coffee or a glass of flavored liqueur (ie rosolia, limoncello or nocillo hazelnut).
