How to Make Green Tomato Jam and tomato sauce Old Fashion
Tomatoes are such versatile staple for salads, slicing, sandwiches, sauces, soups, etc., and is surely the harvest of vegetables. If you have an overabundance of tomatoes or you simply try something new, try these old-fashioned recipes from my recipe collection period. The green tomato jam from mashed green tomatoes and raspberry flavored gelatin. Confusing Family and friends of the jam. For fun, have them guess the main ingredient. The Old-Fashion tomato sauce is served over hot biscuits.
Green Tomato Jam
2 1 / 2 cups mashed green tomatoes (which takes about 3 medium tomatoes)
2 cups sugar
1 package (3 oz) raspberry gelatin
In a large saucepan, bring the tomatoes and sugar to a boil. Reduce heat, simmer uncovered for 20 minutes. Remove from heat and stir until dissolved in gelatin. Remove the foam. Pour into jars or freezer containers, leaving 1/2-inch-espacio head. Allow to cool before covering with a lid. Refrigerate or freeze.
Yield: about 3 cups
Old-Fashion TOMATO SAUCE
Bacon 1 / 2 pounds sliced, diced
1 small onion, chopped
2 tablespoons all-purpose flour
Salt 1 / 8 tsp Tea
pinch pepper
1 can (14 1 / 2 ounces) diced tomatoes, undrained
3 cups Tomato Juice
6 to 8 hot biscuits
In a skillet, cook bacon until crisp. Remove bacon to drain on paper towels. Discard drippings except 2 tbsp soup. Cook onion until tender in drippings. Add flour, salt and pepper and cook, stirring over low heat until the mixture is golden brown. Gradually add tomatoes and tomato juice, mix well. Bring to a boil over medium heat. Cook, stirring for two minutes. Reduce heat, simmer uncovered for 10 to 15 minutes or until thickened, stirring occasionally. Add the bacon and serve over hot biscuits.
